Ground pork: You can also sub ground chicken or ground turkey – both work well with this recipe. I prefer to look for quality meat that is organic.

Blueberries: Frozen or fresh blueberries will work.

Herbs & spices: Fennel, sage, thyme, garlic powder, cayenne, allspice, and salt & black pepper

Maple syrup is optional, but adding 1-2 tsp turns this recipe into delicious blueberry maple sausage patties! I prefer to use pure maple syrup.

Step 1: Combine all ingredients EXCEPT blueberries in a bowl. Mix the pork and spices well using your hands to combine.

Step 2: Form into 6 patties (about 3 inches wide, 1 inch thick) and place on a plate. Place 4 blueberries on top of each patty and press them down gently into the meat mixture (so they are almost fully submerged).

Step 3: Heat oil in a large skillet over medium-high heat. Add patties (blueberry side up) and cook for 3-4 minutes. Flip and cook for an additional 3-4 minutes until browned and cooked through. Drain on a paper towel lined plate, serve, and enjoy!

To cook the patties in the air fryer, preheat to 400 for 3 minutes. Spray your air fryer basket with oil. Add the patties in a single layer (cooking in batches if necessary), and cook for 8-9 minutes, flipping after the first 5 minutes. Enjoy!

  • 1 tbsp olive or avocado oil
