I am pretty excited about this recipe – What could be better than a meal that combines 3 of my favorite foods: chicken, jalapeno poppers, and bacon?! This is a simple paleo/grain-free dish that comes together in 35 minutes and your whole family will love it! Feel free to use regular cream cheese if you tolerate dairy, too.

I used Pederson’s Farms sugar-free bacon (this is the only type of bacon I eat anymore!) for this recipe. You can make this Whole30 friendly by omitting the almond milk cream cheese and just stuffing them with a jalapeno.

I used 4 Butcher Box chicken breasts – cut each one in half and pound them to about 1/2-3/4 inch thickness. This makes 8 chicken roll ups. My husband also pointed out these could be a great appetizer if you slice them up into rounds and stick a toothpick in them 🙂

If the bacon isn’t as crispy as you would like once the 30 mins is up, just broil for a few minutes until desired crispness is reached. Keep a close eye on them though – don’t want it to burn!

Bacon-Wrapped Jalapeno Popper Chicken {Paleo}

Ingredients

  • 2 lbs chicken breasts, 4 medium breasts total
  • ½ tsp sea salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 8 pieces sugar free bacon
  • ½ cup Kite Hill Foods cream cheese
  • 2 jalapeños, seeds removed and sliced into 8 strips total

Instructions
 

  • Preheat oven to 425. Slice your chicken breasts in half width-wise and pound to be 1/2 inch to 3/4 inch thick. Season each piece with a bit of salt, onion powder, and garlic powder.
  • Place one jalapeno strip and about 1 tbsp cream cheese in the center of each 1/2 breast, then fold. Wrap one piece of bacon around each piece of chicken, then place them seam-side down on a parchment lined baking sheet.
  • Bake for 30 minutes or until your chicken reaches an internal temperature of 165 degrees. Broil for 1-2 minutes if you want your bacon to be on the crispier side. Serve with some roasted potatoes and a veggie, and enjoy!
